Tuna Tabouleh


1 Can Rio Mare Tuna
3 cups fresh flat-leaf parsley leaves, chopped
3/4 cup fresh mint leaves, chopped
3 medium tomatoes, finely chopped
1 small white onion, finely chopped
2 tablespoons olive oil
1/3 cup lemon juice
1/2 cup burghul (cracked wheat) (optional)

Tuna in Olive Oil



    In a large bowl mix : Parsley, tomatoes, onions. Set aside

    In a meduim bowl prepare the seasoning : mix the lemon juice , olive oil and salt to taste.

    Add to the first bowl with the Tuna

    For Burghul addition

    Place burghul in a bowl. Cover with boiling water.

    Stand for 20 minutes or until softened.

    Drain. Rinse under cold water. Drain, pressing out water with a metal spoon.

    Spread over the salad mix as much as you wish.

    Serve in mini salads leaves (boat shaped).
