Tuna Quesadillas

Ingredients

50g Cheddar Cheese Grated
100g carrots grated
1 Rio Mare tuna
100g canned sweetcorn (no added salt or sugar)
4 wholemeal flour tortilla wraps
Side:
1 ripe avocado
1 x 230g pot chunky salsa

Preparation

    Drain the tuna and mash with a fork.

    Peel and slice the avocado.

    Lay out a tortilla and sprinkle one half with a little grated cheese and mozzarella, carrot, a tablespoon of salsa, sweetcorn and some tuna.

    Add some sliced avocado and a little more cheese.

    Fold the other half of the wrap over the filling and press down lightly.

    Repeat with the remaining ingredients to make 4 quesadillas in total.

    Heat a griddle pan. Place the quesadilla in the pan, press down gently, cook for 2-3 minutes each side.

    Cut into triangles and serve with salad.
