Pasta with Tuna, Peppers and Potatoes

Time: 30 min



  • 350 gram short pasta
  • 1 leeks
  • ½ red pepper
  • ½ yellow pepper
  • 1 potato, peeled and cubed
  • 160 gram Rio Mare Tuna in olive oil
  • several pitted olives
  • 100 gram cherry tomatoes
  • 40 gram extra virgin olive oil
  • fresh parsley
  • salt


Fill a large pot with water, add salt and bring to a boil, add pasta and cook.
Cut peppers into small pieces.
Thinly slice leek and cut cherry tomatoes in half.
Heat olive oil in a pan, add leek, cook for a couple of minutes, add potato season with salt.
Stir in peppers and cherry tomatoes, cook for about 10 minutes.
Season with minced parsley and olives.
Remove from heat. Add drained pasta and several tablespoons of pasta cooking water.
Add drained Rio Mare Tuna, mix well and serve hot.

Alternative idea:

Instead of olives, add a tablespoon of capers.
